Oatmeal-Chocolate Chip Waffle Cookies
c00095-00.jpg

Baking cookie dough in a waffle iron takes about a minute and a half, a real time-saver when you've got to have warm cookies right away. These cookies, excerpted from the book Dessert Express, look like mini waffles, but they bake up just like oatmeal-chocolate chip cookies, with browned, toasty oats on the outside and gooey, melty chips. Once cooled, they look cute garnishing bowls of ice cream.Yields 24 cookies

Easy Apple Turnovers in 30 min

Jared had a long week at work so friday night I made his favorite treat: apple turnovers. Don't think me too domestic, these beauties take under 30 minutes:

I used store bought pie crust, cut it in fourths and added the following to each section:
handful of small diced apples
t of flour
t of cinnamon
t brown sugar
little dot of butter
Fold over and pinch, like you would a pie.
Brush with egg wash and sprinkle with sugar
Bake at 375 degrees for about 20-25 minutes

9.13.09 Cooking

We have many greens growing in our garden at the moment, I think we'll need to eat salad every day this week or it'll start to rot. I was able to make a nice sized batch of pesto from the 4 little plants we have growing and froze it in ice cube trays so there will individual portions to use later on.

This Simple Garlic and Basil Pesto recipe was easy to make and tasty. Amazingly enough I had all of the ingredients on hand, just added a bit more basil and left out the chili powder.

Later this week I think I'll try out this Arugula Pesto recipe and freeze a batch of it to compare.

For dinner we had a simple salad with chicken:
  • lettuce from the garden
  • tomatoes from mom's garden
  • a little olive oil, balsamic vinegar, salt & pepper
If our strawberry plant had been producing I would have attempted this delicious looking salad for dinner instead.

An ongoing project:

***Boiled Peanuts***
We ran into a guy selling boiled peanuts last month here in Portland at Last Thursday. I have NEVER seen boiled peanuts sold anywhere other than the South. And why not?! They are so delicious and it's not just my North Florida roots. Josh is from Vermont and he can't get enough of them either! After many hours last week trying to boil a batch on the stove (they eventually did come out pretty good!), we've moved onto the crock-pot for the latest batch and are experimenting with a fancy alderwood smoked sea salt.

I wouldn't have thought of making cookies with sesame, but our lovely new neighbors brought some over today to welcome us to the neighborhood and they were delicious. Here's a recipe that seems like it might be similar, add a few drips of chocolate on top for an added touch of sweetness.
